Hello Everyone!

WOW!!! Isn’t this weather just glorious? Hope everyone’s May was a blast. I am going to apologize to those who did not receive the May issue of the Healing House however, those who already know I am completing my 2 year course with CSSN this summer and have my first deadline the end of June, the last being August so, needless to say I am just a little overwhelmed. What I have found that even though I am experiencing such stresses, as studying, running a business, kids soccer, keeping house and pets, I am forever in gratitude. Before learning about Nutrition and other divine secrets, such as law of attraction a time such as just mentioned that may have occurred to me in the past would have left me paralyzed with fear, anxiety, and depression. Now that is replaced with excitement 95% and slight anxiousness 5%. Before it was the exact opposite. Anyhow, to further share with all the importance of good nutrition I am enclosing a recipe and some springtime foods, that you may want to try or better yet give me some feedback on any other foods you find helpful with your nutritional needs. OK, Exciting stuff Happening!!!

Springtime Foods Include:
  • Asparagus: provides 67% of daily value for folate(good for heart health)
  • Apricots: Rich in Beta Carotene and Lycopene, reducing oxidation of LDL (bad) cholesterol. Good for heart!
  • Green Peas: Rich source of B1, B2, B3 B6 and folate, essential for proper metabolism of fats, proteins, and carbs. Rich in antioxidants, promote healthy vision.
  • Spinach: Rich source of vitamins and minerals, Rich in vitamin A. One cup is 294% of daily value and 1000% of daily value of vitamin K, WOW! Important for bone health.
  • Romaine Lettuce: Has a measurable amount of chromium, important for maintaining blood sugar levels.
  • Green Beans: beta-Carotene and Vitamin C amounts help body with protection from oxygen free radicals
  • Collard Greens: Member of cruciferous family. Important for health -promoting sulfur compounds. It is the sulfur that is apparently responsible for decreasing the occurrence of a wide variety of cancers, including breast and ovarian.
  • Avocados: Rich source of heart-healthy monosaturated fats that can actually help lower cholesterol. Provides more potassium than bananas! Guacamole!!! YUM!!!

This Month's Recipe - Quinoa Chicken Salad (Make a day ahead)

6 tbsp. Olive oil
2tbsp plus 2 tsp. Balsamic vinegar (or squeeze a Lemon)
1 tbsp. Chopped fresh basil.
1/2 tbsp. Fresh lemon juice
1/2 tbsp Dijon mustard
3 cups diced cooked chicken
1/2 cup quinoa (wild rice can be a substitute or any other grain)
1 cup halved cherry tomatoes
1 6-oz jar artichoke hearts drained
1/2 cup chopped pitted olives (black)
1/3 cup dried cranberries
1 1/2 tablespoons drained capers
2 cups lightly steamed vegetables (asparagus, green beans etc.)

Combine oil, vinegar, basil, lemon juice and mustard in small bowl; whisk to blend. Season dressing to taste with sea salt and pepper. Place chicken in medium bowl and mix in 1/4 cup of the dressing.

Cook quinoa in large pot of boiling salted water until just tender but firm to bite. Drain. Rinse under cold water to cool; drain well. Transfer quinoa to large bowl. Stir in remaining dressing and toss to coat. Add chicken mixture, tomatoes, artichoke hearts, olives cranberries, capers and steamed vegetables. Season with sea salt and pepper to taste. Refrigerate 4 hours or overnight.

Please be aware that effective July 1, 2007 a price increase for Reflexology will be applicable from $50.00 to $55.00 Rates for hourly Nutritional Consultation will not be increased at present time.
